Personally, I think meal preparation involves a certain level of compromise between couples as well as among family members. Usually, I tried to cook dishes that my beloved and I would enjoy together. Having said that, there are a couple of dishes that I will only make for myself such as my cheat Prawn Noodle Soup which is a concoction of one tablespoon of Singlong Sambal Chilli, a packet of Indomie Mi Goreng and 1 cup of water.
It’s okay if you dislike the sound of it, because my beloved felt the same way too. I have accepted the fact that being a couple does not mean we have to like the same things, or in this instance, the same food.
When my beloved was away for a conference over the past weekend, I savoured the opportunity to cook for myself. I have this huge cravings for noodle soup and after a quick look through in my fridge and pantry, I had what I needed to make a 4-ingredients tofu miso ramen. To add some flair to the ramen, I decided to go with a hard boiled egg and a nori sheet which were optional. This recipe required little time to cook and ideal for cooking for one person.
Ingredients
- 120g dried ramen
- 1 tbsp miso paste (adjust to taste)
- 75g silken tofu , diced
- A small handful of sliced spring onion (scallion)
- Boiling water
- Optional: a hard boiled egg & a nori sheet for accompiment
Instructions
- In a small pot, cook the dried ramen according to packet instructions. Drain and set the ramen aside in a bowl. Add diced tofu over the ramen.
- In the same pot, add 1¼ cup boiling water and a tablespoon of miso.
- When the miso broth is boiling, pour over the noodles.
- Garnish with spring onion.

Such a quick and simple recipe, not what you’d usually expect from a tofu dish!
Been enjoying my own version of this for decades. The more veggies you add the better it gets; bean sprouts, snow peas, shiitakes, shredded cabbage, bok choy, cilantro, etc. Drop them in at the last minute. Instead of a hard boiled egg, I poach an egg in the hot broth. Delicious! Throw in some shrimp or thinly sliced leftover meat, a drop of sesame oil and a squirt of Sriracha and you’ve got yourself one excellent meal. Better than you’d get at most restaurants.
Simply love Tofu. The only trouble is that it lacks taste so to find any recipes which help with is a godsend.
