You must keep this 5-ingredient garlic sriracha grilled chicken as your back pocket recipe! It is perfect for those days that even a simple stir fry feel like whole lot of work. Only five ingredients of which four of them you probably already have in your pantry. It takes minutes to whip up the marinade and under 30 minutes to cook in the oven.
I have a love-hate relationship with winter. I choose cold weather over sweltering heat any day. However, I really miss the long daylight in summer.
Commuting home from work in the dark dampens my enthusiasm for doing anything when I get home. Hence, when it comes to cooking, my motto lately has been the more hands off the better ha!
This means minimal chopping and sautéing by the stove.
The means my oven has been working overdrive.
Despite being effortless in my meal preparation, I want a tantalising meal at the end of a work day. I love chicken and rice and therefore my meals for the past weeks have been made up of grilled chicken and/or fried rice (case in point here, here and here).
This 5-ingredient garlic and sriracha grilled chicken is based on this recipe. I love the simplicity of the original recipe and its versatility to adapt based on the ingredients I have on hand. My Sriracha sauce was down to its last hoorah so to make space for a new bottle, I decided to create a marinade based on Sriracha sauce.
Ingredients
- 1 sachet Leggo's Tomato paste (equivalent of 2 Tbsps)
- 2 Tbsps Sriracha
- 2 Tbsps "Sweet Soy Sauce" (Indonesian Kecap Manis) - store bought or homemade
- 2 garlic cloves, grated
- 500g (1 pound) chicken thigh fillets - about 4 thigh fillets
Instructions
- Preheat oven to 180 C (350 Fahrenheit). Line baking tray with parchment paper and set aside.
- In a mixing bowl, add tomato paste, Sriracha, Sweet Soy Sauce and grated garlic. Whisk until well combined with a fork.
- Coat the chicken thigh fillets and arrange them on the prepared baking tray.
- Bake for 25 to 30 minutes and serve immediately with your choice of rice or salad.
I just made this using honey and a bit of sugar instead of brown sugar and it was amazing. I paired it with a salad that was mostly lettuce with mangos and avocado. The dressing was a simple lemon garlic sugar salt pepper mix. I love it and will do it again. Yummy. Clean. Perfect.
Thank you for your wonderful feedback, Frances! I am glad that you enjoyed the recipe. 🙂 x Emily
Oh yum this looks amazingly tasty, I can’t believe how easy it is too!
You can’t go wrong with sriracha. I love this combination with chicken. Will be making this soon!
I have made this twice and both times they turned out great. Thanks for a simple yet tasty recipe.
I am glad you like the recipe, Michelle. Thank you for trying the recipe and leaving such wonderful feedback. x Emily
Will try it tomorrow for Sunday lunch ……. looks so yummy
Can I use regular soy sauce and add sugar or honey instead of sweet soy sauce?
This is a fantastic base for all kinds of dishes. I usually ad broken grean beans, sliced red bell pepper and serve it with rice or noodles. Simple, healthy and yummy! Can’t wait for the BBQ season to begin; pita bread, lettuce and garlic sauce.
Can I check – do you actually grill this (like the recipe name and the pictures suggest) or bake it as the instructions say? Thanks…
I was also wondering about that too. What is the cooking time on the grill? Cheers.
where does the grilled come in
where does the “grilled” come in?
Nice! This look so Incredible! I’m sure my whole family will love it!
I made this for Father’s Day and we all loved it. After searching recipes for making my own sweet soy sauce, I decided to go with the easy recipe link you provided. The sauce turned out great. The chicken was moist and very flavorful, though I’m glad I did it in the oven as suggested instead of on the grill. I think the thickness and sugar content of the sauce would have caused it to burn. Thanks for sharing! I’m going to try to come up with other meats to prepare using this delicious sauce.
After the success of this recipe + the salmon & wasabi lemon cream sauce one, I totes bookmarked probably 20+ other recipes of yours to try out. Can’t wait. Delicious and simple. :^)
What makes this “Grilled” ?
