Easter Sat & Sun + Two Cheeses Sweet Potato Hash Brown

On weekends and days when we (my beloved and I) don’t have to work, part of our dating routine is to get takeaway coffee from our favourite cafe , Factory Espresso,  and take a leisurely stroll around town while finishing up our coffee.

Two Cheeses Sweet Potato Hash Brown

Makes 8-10 three-inched (7cm) sized hash brown – the quantity may vary depending on the thickness

Ingredients:-

  • 500g / 18 oz sweet potato, peeled
  • About 2 tbsps parmesan, grated
  • About 2 tbsps cheddar cheese, grated
  • Freshly ground pepper
  • Oil for pan-frying

Methods:-

  1. Peel and use a coarse grater, grate sweet potato.
  2. Squeeze out excess moisture from grated sweet potato. You can use hands but to drain the liquid thoroughly and easily, fill cheese cloth with the grated sweet pototo. You can use a potato ricer – a method suggested in Simply Recipes.
  3. Add grated parmesan, cheddar and black pepper. Mix to combine.
  4. Heat a pan with some oil. Add a tablespoon full the sweet potato mixture onto the pan. Start cooking with low-medium flame in order to gauge the heat level – ensuring the sweet potato will soften without burning the hash brown. Throughout the pan frying process, I have maintained the stove on low heat. Even though I was using a non-stick pan, I put in about a teaspoon of oil each time I added the sweet potato mixture, spreading the mixture as thin as possible, at the same time with some thickness without making the hash brown falling apart. You need a bit of oil to crisp up the hash brown.
