Spaghetti bolognese. My ultimate comfort food, food which I love to cook in a large batch in anticipation of next day’s packed lunch!
I have been making bolognese with mince beef or mince chicken with a side of salad for the veggie factor. Being a fan of a one dish meal, I love to combine vegetables and protein in a dish just because it makes my life much easier, less washing and I feel good eating it.
In order to introduce a little change to my bolognese routine, I have decided on making it with turkey mince. Yes, turkey isn’t just for Christmas or Thanksgiving (if you are in the States). It can be a healthy day-to-day protein option especially it is a lean protein.
Ingredients
- Cooking oil
- 500g Turkey mince
- 535g Pasta sauce
- 250g Frozen spinach
- Salt & pepper to taste
- 400g Spaghetti
- A handful of grated parmesan
- A handful of chopped parsley
Instructions
- Heat oil in a large pan/pot. When the oil is hot, brown mince turkey.
- Add pasta sauce and frozen spinach. Stir the ingredients until well combine and cook the sauce until boiling over high heat, covered. When the sauce is boiling, lower the heat low and allow the sauce to simmer.
- Cook the pasta according to the packet instructions in salted water until al dente. Reserve a cup of pasta water.
- Taste the sauce. Add salt and pepper to taste. Add drained spaghetti to the sauce and toss to mix. Add the reserved pasta water should you prefer a saucier pasta.
- Scatter grated parmesan and chopped parsley. Serve immediately.

Such a simple change from beef to Turkey, something I just wouldn’t have thought of, too set in my ways. Made it for supper last night and ….. delicious , very well received by all the family, the spinach adds greatly to the flavour .
