This grilled lime and sweet chilli salmon is the ULTIMATE FUSS FREE COOKING meal (a big call, I know). It is one of my all-time favourite under 30 minutes meals and with only FIVE INGREDIENTS! These beautifully blistered sweet and sticky salmon portions are to die for especially when paired with brown rice and cooked broccoli.
While you can get away with simply sweet chilli sauce, salt and pepper as a marinade, I like to add fresh aromatic ingredients such as garlic and lime rind to elevate the flavours. This way the grilled salmon will taste a little more complex, as if you have spent a lot more time and effort in making this meal ha!
There’s something really appealing in pairing brown rice, broccoli with grilled salmon. I love how the nuttiness of brown rice and the crunchy texture of perfectly cooked broccoli cuts through the richness of salmon. I also love the fact it is a healthy tasty meal!
Ingredients
- 1/2 cup sweet chilli sauce
- 1 clove garlic,grated
- A teaspoon of grated lime rind (reserve the lime for serving)
- 1 teaspoon light soy sauce
- 4 x skinless salmon portions (600g/1 pound)
- Toasted sesame seeds - optional
- Sliced spring onion - optional
Instructions
- Preheat oven to 180 degrees Celsius (356 Fahrenheit). Line aluminum foil followed by a baking paper on a baking tray. Set aside.
- In a mixing bowl add sweet chilli sauce, garlic, lime rind and light soy sauce. Whisk until well combined with a fork. Transfer 1/3 of the marinade to a separate bowl (make sure it does not contaminate with the raw salmon as it would be used as a sauce when serving).
- Add salmon portions to the remaining marinade in the mixing bowl. Make sure all sides are coated with marinade. (Tip - You can prepare and marinade the salmon portions ahead of time and allow them to marinade overnight).
- Transfer the marinated salmon portions onto the prepared tray and bake in preheated oven for 20 minutes or until they are fully cooked. While waiting for the salmon to cook, cut the lime into 4 wedges.
- Remove the grilled salmon from the oven. Sprinkle with toasted sesame seeds (optional).
- Serve with lime wedges, four servings of cooked brown rice and broccoli as well as the reserve sweet chilli marinade as extra sauce. Enjoy!
