Dinner For Two: Moroccan Chicken


MAGGI Just for 2 – a NEW adult range of tasty recipe bases that are right Just for 2.

Finding time to spend together with your special someone is getting harder and harder, and the cost of dining out is also relatively high in today’s difficult times. That’s why we decided to experience a trip to Africa, with our palate of course!

I used the Maggi Just for 2 recipe base to create a Moroccan themed dinner that my beloved would enjoy. He has a taste for food rich in spices, as well as a love for chickpeas. I especially like chickpeas because they are low GI and therefore healthy to eat. With some chicken, canned chickpeas, baby spinach, tinned crushed tomatoes and Maggi Just for 2 Moroccan Chicken recipe base were all it took to create this lovely dish.

Moroccan cuisine as we know is flavoursome, sensual and aromatic, but not overpowering.  Thus, it makes and ideal date night meal. This recipe base delivers on all counts as the Moroccan Chicken has a good balance of spices. If you are fan of cumin and coriander (like moi), this dish does not disappoint.

The idea being to make a Moroccan dish in a no fuss three-step process that was desirable in the middle of work week when the motivation for cooking was probably at the lowest level for me. It was a quick and easy way for us to reconnect after a busy day at work over great food. Yay for cooking shortcuts eh? 😉

Moroccan Chicken (ft. Maggi Just for 2)

Recipe as per packet instructions – Serves two

What you’ll need:-

  • 300g chicken thigh or breast, chopped
  • 400g tinned crushed tomatoes *
  • 1 x 75g packet of Maggi Just for 2 Moroccan Chicken
  • 130g canned chickpeas, rinsed & drained
  • 1 cup (20g) baby spinach

* I used bottled tomato passata.

Method:-

  1. Heat 1 tbsp oil in a medium frying pan, add chicken, cook for 5 minutes, or until browned.
  2. Add tinned tomatoes, MAGGI Recipe Base and chickpeas, cook for 15 minutes or until chicken is cooked through.
  3. Add baby spinach, stir through. Serve with couscous.

    How will Maggi Just For 2 help make dinner preparation easier or more romantic for me?

    My boyfriend and I are probably what you would call a typical “professional couple”. We both have stressful days at work and regularly get home late. Often our solution to dinner is to go grab take away as anything else is too hard/too much effort.

    Maggi Just For 2 sounds like the perfect solution to dinner for us. I enjoy cooking on the weekends when I have time, but for my boyfriend, cooking is like trying to speak another language. Before I met my boyfriend, cooking a meal with your partner over a bottle of wine was my idea of a good night in, but it hasn’t been my reality as of yet for us. So the Maggi saches seem like the perfect solution for us. As the recipe sounds so simple – cooking won’t seem so foreign for my boyfriend and he might just be enticed enough to join me in preparing dinner…and if he doesn’t come out of his “man cave” to cook, it’s not a big deal for me to cook up the meal on my own (he’ll just have to do the dishes afterwards!!). It would also encourage us to eat in more – which is good for the budget and is better for us.

    So for me, Maggie Just For 2, would make my life easier and hopefully more romatic by taking the hard work out of cooking a home cooked meal! And it might just get my boyfriend to crack that bottle of wine and start to get familiar in the wonderful world of cooking!!

    p.s. I love all of your blog posts – you always write simply and have recipe ideas that inspire me not only to cook what you have cooked, but it gives me ideas of other recipies I want to try out!!

    how hilarious, I cooked this on the weekend and photographed it on the plate that is the same as your bowl! lol. I didn’t like the photos though so i’ll probably be reshooting. Loving your maggi series photos <3
