I have always wished to make my own beef pho. It’s so comforting and refreshing having noodle soup as a meal. I love the crunchy bean sprouts, the ever-so-flavourful broth, the fresh coriander, the lime juice and last but not least, the slices of beef to complete the noodle soup.

Before I proceed further, I should warn you that this is by no means an authentic beef pho. In fact, the base flavour of the broth hails from Thailand i.e.  the Thai green curry paste!

Hi friends! I hope you had a wonderful weekend!  I had spent my weekend catching up on the fourth season of Games of Thrones and snacking. I know, I know, it was not an overly productive weekend but I can now say that I have finally caught up with the show and joined the GoT debriefing at work ha!

Anyway, I have managed to squeeze in a grocery trip to Woolworths which was where I got sucked into a pile of ripen avocados as I entered the shop. They screamed fresh guacomole and corn chips – an opportunity which was too irresistible to be overlooked albeit costing me $2.98 a pop!

I rarely use star anise in my cooking.  Ever since my friend taught me how to make this soy and star anise braised chicken, I don’t think I can ever live without this dish. A tad too dramatic? Perhaps. :P

I have made this dish many times and strangely, never thought of sharing this dish until now.  It is so easy to make and if rice is your staple and obsession, this dish goes awesomely well with rice. Imagine the spiced, savoury and slightly garlicky sauce being mopped up by every grain of fluffy rice. Oh boy, there’s no words!
