When it comes to making marinades, I’m sure you all have your own secret recipes.
I make no secret that I don’t have a fix recipe for marinades as I usually make them up as I go. So whenever I receive compliments on some of my successful made-up marinades, I somehow find it tricky to recreate the similar flavour afterwards. (Uh duh, no recipe!)
Anyway, for my beloved blog, I took the effort of jotting down every ingredient (including measurements) for this marinade. Moreover, I feel more encouraged to do so now as my other half has gifted me an all-weather memo book.
With my new-found obessession of writing down my recipes on an actual book (rather than depending on my memory), I’m excited to start a family cookbook of my own. Who knows this book will eventually become a family heirloom, eh?
Maybe this thought is a bit far-fetched, but a girl can hope, can’t she? :P

Grilled Chicken Thigh Fillets
(A fuss free cooking recipe)
Serves 2-3 people, depending how much of a meat-eater your are!
Ingredients:
500g chicken thigh fillets
3 tsps hoisin sauce
1 tsp sambal oelek / crushed chilli paste (alternatively, 1/2 tsp chilli flakes)
1 tsp sesame oil
2 cloves of garlic, grated
1 tsp of grated ginger
1/2 green chilli, roughly cut
Some white pepper
Salt to taste
Method:
1. Preheat griller/broiler.
2. Stir to combine hoisin sauce, sambel oelek, sesame oil, garlic, ginger, white pepper and salt in a bowl.
3. Pour the marinade over the fillets and mix well. Marinade them for at least 20 minutes.
4. Arrange the fillets in a baking dish and sprinkle evenly with green chilli.
5. Grill the fillets for 15 minutes on one side, and another 15 minutes on the other (time may vary depending on your griller).
Suggested garnish: Toasted sesame seeds or chopped coriander/cilantro leaves.

I know what you mean by never writing down things when you’re inventing. I do the same, I add a little of this and a little of that and sometimes it turns out great and then when I try to recreate it later it doesn’t turn out half as tasty. Very annoying. But good on your better half for getting you a notebook!! I find myself reaching for whatever paper’s lying around and then I end up with a stack of papers with odd recipes. I’m gonna go out and buy myself a notebook too! Thanks for the idea!

Hey Emily, I was like that but my memory wasn’t that great. I started writing things down especially measurements! When I cook, I taste it on the go so sometimes it’s hard to get measurement. Glad to know you use chicken thighs! I’m a dark meat girl
