As much as I enjoy wearing two hats, working as a full time accountant and blogging two to three times a week have turned out to be a little more taxing than I envisioned. Plus, I have some personal stuff I have to deal with, hence for the last several weeks, I decided to give myself some time off from blogging for some R&R. The perk of being your own “boss” ha!

Like most vacations, it started to get a bit dull after a while. Am I on my own with this statement? ;)

As my mum and I live in different countries, calling to wish her Happy Mother’s Day is my typical ritual. I wish I could have a better celebration with her each year like making her breakfast in bed or spending a day at the spa with her and my sister who is also a mum now.

When it comes to food, my mum loves to indulge. She used to eat butter straight out of a tub, which explains where I got my love for butter from ha! For health reasons, she has cut down her indulgence and embarked on a low fat and sugar diet. It got me thinking about easy, almost fool proof and healthy breakfast recipes which are suitable to those who wish to pamper their mums with breakfasts in bed.

Let’s celebrate the return of Season 6 of MasterChef Australia with some fun cupcakes, shall we?

I dare say that these cupcakes are the prettiest ones I have ever made. To ensure the cupcakes are dairy free, I have adorned them with a soft, pillowy and slightly caramelised meringue frosting. This beautiful frosting was a symbol of me being on cloud nine. Okay, that’s totally cheesy ha! Adrenaline of excitement must be still running while I was typing out this post.
