Lately, I have really been interested in cooking vegan friendly food. I love my self-imposed cooking challenge especially coming from a person who does not have any strict dietary requirements.  When I tried to cook with only plant based ingredients, it allows me to explore new combination of ingredients.

Personally, I think meal preparation involves a certain level of compromise between couples as well as among family members. Usually, I tried to cook dishes that my beloved and I would enjoy together. Having said that, there are a couple of dishes that I will only make for myself such as my cheat Prawn Noodle Soup which is a concoction of  one tablespoon of Singlong Sambal Chilli, a packet of Indomie Mi Goreng and 1 cup of water.

My first damper experience was at Biddy Walsh’s Irish Pub in Orange. It was soft, fluffy and warm – a perfect vessel for me to slather a generous amount of softened butter. It was memorable and delicious. I was sold with the idea of damper. My dear friends, if you were not familiar with a damper, it was a traditional Australian soda bread usually cooked over hot coals of a campfire. People who know me would tell you I was far from being a camper. But between you and me, I like the idea of camping food. Baked beans, stew cooked in a cast iron, s’mores …  camping looks positively delicious! And maybe, just maybe, it is not a scary notion at all.
