Things can get pretty crazy this time of the year. My much delayed “spring” cleaning, Christmas shopping, baking and a long list of other tasks to get myself ready to welcome the festive season. I usually go easy on the cooking department especially after a long day of running errands in town, the extreme bicep and triceps “workout” for carrying multiple groceries bags and the last thing you want to do when you come home is to be in the kitchen cooking.
Even for an avid home cook like myself, I confess I have one of those days that I don’t want to do a full on a cooking, days when ready made meals and sauces are my cooking best friends which brings me to my new discovery of Pitango Risotto.

Thoughts: I must admit it was my first time having ready made risotto. Before this, I have been relying on my version of convenient risotto which still requires some stirring time. If you want an almost instant risotto meal, the Pitango Risotto definitely gets a tick in the convenience department. Basically, all it takes is to be reheated in the microwave for 3 to 4 minutes, add some simple accompaniment such as salad or grilled meat and you will have a decent meal on the table in no time.
What about the taste? I got the chicken and garlic risotto and it was perfectly seasoned and tasted homemade which is a plus. I have the habit of reading the ingredient list on the food I consume and surprisingly this one was actually straight forward, no scientific jargon that is foreign to me. And it tasted exactly that too.

Pitango Organic Chicken & Garlic Risotto with Rocket Salad
Serves 2 / 10 mins to cook
What you’ll need:-
- 1 x 500g pouch of Pitango Organic Chicken & Garlic Risotto
- 50g pine nuts
- 100g rocket
- 1 tbsp balsamic vinegar
- Light drizzling of extra virgin olive oil
- Parmesan cheese (to taste) – optional
Method:-
Toast pine nuts in a small pan until lightly brown. Set aside. In a bowl, dress the rocket with balsamic vinegar and olive oil. Set aside.
Pour the risotto into a microwave safe bowl and heat in microwave for 3-4 minutes, stirring occasionally, until heated through.
Divide the risotto onto two plates, topped with rocket and pine nuts. Serve immediately.
