[Recipe] Flourless Chocolate & Banana Loaf, Vegan Friendly & Gluten Free

Flourless Banana Chocolate Loaf, Vegan Friendly & Gluten Free | www.fussfreecooking.com

In my last 5 Ingredients Spelt and Chia Seeds Banana Bread post, Felicia from Dish by Dish asked:-

“Hey Emily! this looks beautiful! I’m just wondering if I can use almond meal to replace spelt flour?”

I thought what a brilliant idea to give a flourless banana bread a go!  So here it is, Felicia, my take on flourless banana bread – with almond meal with raw cacao powder. I did not add any sugar to the loaf except for a light sprinkling of coconut sugar on top of the banana toppings to help with the caramelisation. Ooooo, caramelised bananas, can’t say no to that hey?

[Recipe] Red Lentil (Dhal) Curry, Vegan Friendly, Gluten Free

Red Lentil (Dhal) Curry, Vegan Friendly, Gluten Free | www.fussfreecooking.com

Hey guys, it’s Wednesday!!!

Can’t believe we are half way through the week already? Doesn’t this week feel short or what!

Anyway, as promised in my last post, here is my red lentil curry. When it comes to different types of pulses that are available, red lentils are my favourite for one obvious reason – they require very little time to cook and there’s no need for pre-soaking.

I personally prefer to have lentil curry with homemade flatbread. Oh, they are such a delicious combination! If you have no time to make your own flatbread, rice can work just as well.

Eat breakfast like a king, lunch like a prince and dinner like a pauper – this is what I like to achieve with my meal plan as best as I can.  I must admit at times this may not be possible with a 9 to 5 job especially when there were times I worked through lunch or overslept in the morning and therefore, there was no time for breakfast.

Like my sister would tell me when there’s a will there a way.

Writing my meal plan on a piece of paper helps. It gave me an overview of my diet on a weekly basis and it helps me to control my grocery shopping bills as well as minimising wastage.

[Recipe] Chia Seeds Gel As Egg Substitute in Baking

Chia Seeds Gel as Egg Substitute | www.fussfreecooking.com

I have a slight obsession with banana loaf. If you ask my beloved, maybe “slight” is an understatement ha! I have several banana loaf recipes on my blog and I have just featured a vegan and dairy friendly version two weeks ago.

When it comes to baking, one of the frequently asked questions I received was what I would do to substitute egg.
